Mushroom Salad
necessity is the Mother of invention

3/4 cup oil, less is OK too
1/2 cup vinegar, any kind
1/4 cup water
2 tsp salt
2 tsp garlic powder
pepper to aste
1/4 cup sugar

Boil in small to medium pot thenlet simmer for about 5 minutes.
Slice box of mushrooms and add.
Let simmer another 3 minutes.
Add a shake of Italian seasoning.

Let chill and serve cold.

Mmmmmmmmmmmmm

CM, thanks for the recipe! I made it for last Shabbos and it was yum! Only thing is that there was too much dressing - maybe my box of mushrooms is smaller than what you use?

DH didn't like it so much with just mushrooms, so I made it again for him with zucchini and red pepper and he really liked it. Personally, I liked the original version better, but both are good.

I also made the shredded cucumber salad you posted for last Shabbos. Thanks so much for taking the time to share recipes with us!

Actually the original recipes calls for more vegs, we just preferred it with all mushrooms.

CM- one shabbos I had way more guests than I planned for and a friend who was supposed to bring a deli salad forgot it and lives outside the eruv so I made a salad w the only thing I had in the house- 2 boxes of mushrooms!
added oil, vinegar, mrs dash, salt, pepper, some other stuff.
it was great!
Plus it filled ppl up bc mushrooms are so meaty and substantial as veggies go...

this recipe sounds delicious - I want to try it for shabbas, do you think I could use sliced portabellas and other types of mushrroms as well?

Since I found this recipe (a few months ago), I've been making it every Shabbos. . . it's a real hit here!

My modifications: Very Happy

I use whole baby bella mushrooms- great flavor and texture, and looks nicer imo
I use a LOT less oil- prob about 1/4 cup, and it's perfect
I find that I can use 1.5 boxes of mushrooms for the recipe and there's plenty of liquid

Thanks for enhancing our Shabbos table!

Sorry, I didn't get back online on Friday so I just saw this. I definitely cook the mushrooms longer than three minutes, probably about ten. I don't think its possible to overcook them, unless you really exaggerate. I've never had a problem with too much or too little time on the fire, and I tend to dump them in the pot and then forget about it til I'm back at the stove for something el Wink se
