Anyway I can make some kind of strawberry smoothie type dessert with frozen strawberries? Will it still have a smoothie texture if served on shabbos?

If you're looking for a smoothie taste then no. Smoothies are really only good for about 1/2 hour from when they are processed. Maybe someone can chime in regarding a strawberry sorbet where you blend frozen strawberries but actual smoothies need to be fresh.

Can pineapple
Can peaches
It should hold up for 2 days

Frozen Bag Strawberries, mango, peaches, blueberries.
Blend
You can add some orange juice for more juicy texture.
