I cut off tops of beets and radishes and put in bowl with water. Its growing nice leaves, but the beets got a bad smell. What am I doing wrong?

Other than the bad smell, does everything look right? What is the bad smell like?

Could be that the water needs changing.

The beets can go bad, but in that case putting g them in soil won't save them. Can you see any roots? They need roots to live in soil.

Next time try to put them in a cup of water suspended by toothpicks so only the very bottom is touching the water
but I would put them in Soil and see what happens I don’t think they die

Once you start seeing the leaves thriving, they need to immediately go into damp soil. From there, the plants will either sink or swim. If you leave them in water for too long, they will be beyond saving.
