For the first time in my life I am making a tongue (dh request). I have absolutely no idea how to make it. I bought it frozen and plain. I don't know if it is pickled or not (dh thought it might have to be pickled but doesn't know why!!).
Anyone?

If the package doesn't say pickled then it's not. Anyways, it doesn't matter.

Place tongue in large pot, cover with water, bring to a boil. Pour off water, run fresh water over the tongue, bring to a boil again, pour off water again and repeat one more time, but this time reduce heat and simmer covered for about 3 hrs on low heat. Cool tongue enough to handle and peel off the skin while still warm, it's a lot easier than once it's totally cool. This part is pretty gross LOL refrigerate a few hours or overnight , slice thin .

Here's a recipe for sweet and sour sauce (it's more sweet than sour)

16 oz. can of tomato sauce
1/2 cup brown sugar
1/4 lb. raisins
1 1/2 cup water
1/4 lb. dried apricots, diced (although I usually leave it out)

Heat all ingredients. Bring to a boil. Place sliced tongue into sauce and simmer 30-40 minutes over low heat.

Peeling it is a good job for a husband! In fact, the last time I made this, I think it ended up being dh’s job.

yeah, choc, that's why I don't eat it. Once you gotta peel that thing, you lose your appetite for it LOL

we buy tongue in the deli every week for shabbos but its probably cheaper to cook it myself. I think ill try it next time im home for shabbos.
btw, do they sell half a tongue or can u only buy it whole?

I'm not sure that's true, Mrs. Leo. Once you cook it for 2 hours and have to peel it, etc., how much more is it to buy it ready made and already sliced?

a deli slicer is $100.

you could buy veal tongue, which is a whole lot smaller than beef.

when I cook or bake, I hardly ever go smaller....all that work? I like more bang for my buck, so to speak. if it freezes well, you can make it less often. saving electricity, washing up, shopping, etc.

In the deli next to my house the ready cooked tongue goes for $25 a pound, how much does raw tongue go for?
And I dont need a real deli slicer. I can just cut it with a knife, its not that bad.

I have no idea. the only cold cuts we really like are $40 a lb at a rest. near my office.

we would have to use a $100 deli slicer if we were to cut them thinly enough to really enjoy them. our last one is broken.

I cant do toungue. I once bought it and it grossed me out so much I refused to buy it again. It jsut LOOKS so much like a toungue !

I dont get squeamish about much - but this is just oo much. Luckily dh does not mind.

So I bought One Big Tongue Today (It was the smallest I could find and it was $35 the others were up to $45)
It is pickeled.

#1 How do I cook it?
#2 What type of sauce would work?

The same goes to the Pickled Chicken Roll I bought. How do I cook that? Also what sauce would work with that?

Is that because it is hard to do, or just because you don't do it?
Becauuse, I used to have a hard time removing the skin, by the instructions I got from my dsils. So now I let it cook thoroughly with the skin on, and when it is done, and cooled, the whole skin comes off in no time. Try it, you will never go back to doing it the way you used to.

The way I cook it, is I put it into a big pot of water, and let it cook for hours, like 4-5. When it is cooled, I strip the skin off it. I then put it to freeze, in a plastic bag. When it is good and frozen, I sometimes take it to the butcher to cut into slices. I make a sauce like a letcho. One white onion, one red pepper, and one green pepper, ratio. I usually multiply it. I then saute it till good and soft. Let it cool, add 1 can tomato sauce to every one set of onion/pepper. Then on yom tov, I warm up the slices in this sauce. In my house, I also cook fish balls in this sauce, not the same pot of course, but I do add water when I do the fish. And my family licks both their fish and tongue plates clean. Mind you, lots of challa goes without saying. Remember you asked what I do with 18 lbs. challah?

It doesn't have to come off in one piece, lol. Use a small knife to peel the skin back and down. It;'ll come off in pieces but it comes off pretty easy while it's still warm.

cook it till it is done. then when it is cool, it comes off mostly in one piece. before this way, I had a very hard time taking it off, and dreaded it. but now, I have no problem. I dont mind it at all.
