Any one ever made sushi from scratch ? Would love help ty

Sure.
You need the bamboo rolling mat which I like to line with plastic wrap. Place a nori square on that. Pat down cooked sushi rice (cooked according to package directions) leaving edges bare. Put down row of fish (tuna, salmon, etc) and veggies (cucumbers and avocado are our favorites). Sprinkle sesame seeds. Roll up and squeeze together, then unwrap and slice.
With a dairy-free teenager, I'm doing lots of sushi variations this week. Gotta feed her something.

I use Nori from Sushi Metzuyan or Eden. Never noticed anything else about the type.
If you want the rice on the outside, sprinkle the plastic wrap with sesame seeds, mash down the rice to size of the nori, and then place the nori over the rice, continue with fish and veggies. roll up same way - but you sort of make the nori stick to itself, the rice is a little smaller than the nori size. I've done it. It's a bit more complicated but practice makes perfect.

You can just start the same way - put sheet of nori down, press rice on top - and then flip it over.
Now I want sushi!! ;-)
