This is my recipe, lifted from a website that printed it as "the best pessach brownie"

3/4 cup oil
2 cups sugar
1 cup potato flour
1/4 cup cocoa
1 tsp. lemon juice
4 eggs
1/2 pkt. choc chips and/or
1 cup nuts and/or
1 cup coconut
Mix together with whisk method. Pour into 9 x 13 pan and bake @
350 for 45 minutes. |

I'm thrilled to see that this doesn't require a mixer. I broke my mixer day b/4 erev after baking my seventh cake, but b/4 I had a chance to bake even one brownie. This recipe will now 'save' us! Thanks Chavamom!

Probably chocolate cakes/brownies are the best to make b/c the cocoa/chocolate taste covers the eggy taste.

Well, too late for this year, but here's my regular brownie recipe, modified for Pesach - comes out great!
4 eggs
1 c. oil
2 c. sugar
3/4 c. cocoa
1 t. vanilla
1 scant c. cake meal
Opt: choc. chips
Mix all ingredients except cake meal & chips...add cake meal & mix, add choc. chips if desired and mix. Pour into 9x13 and bake @ 350 for 1/2 hr.
YUM!!!
