Ok so I cooked today... Just dump apples and pears into the pot. Put 1 part water to 2 parts fruit, so that it’s nice and heavy, unless you like it more watery. Put in a lot of sugar to taste, and some vanilla. We do not use strawberries. I also put a DROP of beet juice for color.

I use strawberries also in my compote. I do it just like withhumor, except I use a lot of water. I use pears and yellow apples, about 6 of each, and a pint of strawberries. Don't be surprised though, once the compote is done, the strawberries will have lost their color, they give it over to the water, and it's delicious.

Yum, it must be great with Strawberries...

Withhumor, how does it cook if you use 1 part water to 2 parts fruit-- the water doesn't cover the fruit all the way?

I just put in whatever dried friut, like prunes, figs, raisins, and whatever else I can find and I cover it with water and let it cook for 30 minutes. thats it. if I feel like it I put some cinnamon on top.
