ISO: Salad not sweet, last long, low carb

Is that even possible?

I'm looking for a salad recipe that can last a long time in the fridge, that's not very sweet and is low carb. Any ideas.

ra_mom' recipe, would be best put I need a substitute for the past and corn Very Happy
Tri-Colored Pasta Salad
-1 pkg. tri-colored pastra spirals, cooked and rinsed according to package directions
-1 can baby corn, sliced
-1 can straw mushrooms (or whole or button mushrooms)
-1 can Israeli pickles, sliced
-1/2 small jar olives with pimentos, sliced
-pickle juice
-olive juice
-garlic powder
-onion powder
-black pepper
-salt (optional)

Combine pasta, baby corn, mushrooms, pickles and olives in a large bowl or pot.
Splash with some pickle juice and olive juice.
Season with garlic powder, onion powder, black pepper, and if using - salt to taste.
Toss to combine.

Baby corn is low carb

Maybe use cabbage instead of pasta

Most of the recipes that last long in the fridge are marinated, so they have sweetener to offset the vinegar or acidic component. And/or they use just one vegetable as the main ingredient, which ends up keeping the salad fresher because the different juices don't fight with each other.
Like cucumber salad, cole slaw, marinated rainbow salad. All sweet but I make mine sweet and savory, often with lemon juice, and extra kosher salt.
But you can get creative and make non sweet salads like

lemony dill carrot salad
roasted beets salad
radish salad

Some last a while in the fridge. Often the best way to make these last is to cut up the veggies (often in the food processor) and keep sealed in the container, up to a few days, then dress the salad when you're ready to take it with you/serve.

So funny - My DH is quite picky too! He jokes that he eats his vegetables by eating the cows that eat the greens for him Surprised LOL I just gotta laugh - I am very health conscious, but I think that being a nagging wife would be worse on his health than veggies, so I try to beg a good sport!

Jamie Geller also has an Asian Cole Slaw. Its not really cole slaw like deli cole slaw.

It has:
Cabbage
Water chestnuts
Hearts of palm
Baby Corn
