Your family will love these, trust me. I got this recipe from an adorable Persian lady at my old shul. Healthy, easy and delicious! Smile

Passover Walnut Cookies:
3 cups ground walnut
1-1/2 cups confectioners sugar (can use reg sugar, but better with powdered!)
4 egg whites
pinch cinnamon (opt)
1/2 cup mini choc chips (opt)

mix all ingredients together
spoon up a tablespoon ful and flatten it into cookie shape on cookie sheets
keep one inch apart on sheets
bake at 350 for 10-15 mins
watch closely that they don't brown
should be a little soft when done

Chag Kasher V'Sameach!

Do you need to whip up the egg whites first?

no whipping necessary - just mix it all together. Couldn't be easier.

I'd be interested in anyone else's recipes as well. Especially side dishes for Pesach.

Also, has anyone tried those Pesach noodles I see in the stores? Will kids eat them?

You can probably take regular sugar and put it in the blender and make it finer.
