beans, peas and nuts are great source of protein, and vitamins. you can make delicious soups with loads of veg and beans or peas. whole grains are probably good too. you can have brown rice with mushrooms...
portabela mushrooms are also delicious and filling. you just bake it with spices and some oil...yum.
lots of salads, cooked veg, and soups is the trick

Check out the on-line recipe indexes for the South Beach Diet. There is a lot out there and you certainly don't have to eat meat morning, noon and night.

quinoa is as versatile as rice, can be made savory or sweet and is a grain that gets digested as a protein. It is delicious and tastes very nutty. I substitute it into rice recipes, couscous recipes etc.
