I love these plain!
How about chopping up & using anywhere you would normally use relish or pickles. Like in a potato salad, or egg salad? Add to Israeli salad? Slice to put on Deli sandwiches?

Thanks! Glad to find someone who knows these. I bought the cans on special not knowing what they were and thinking I could do an eggplant dip. They seem kind of beet-like to me. I guess I can just try slicing or dicing them and see how they go over.
I'm still open to more ideas so please keep them coming.
