have a lot of wraps that I would like to use up before Pesach -
any ideas what to do w/ them besides deli wraps?

eggsalad wraps
tuna wrapps
bake them in a shape and serve salad in it
use it as a pizza base

make enchiladas. It's become a fave here and helps us use up leftover wraps and other ingredients.
brown and chop ground meat. season
sautee onions & peppers
place both in the wrap and roll thinly (like blintzes)
smear sauce on bottom and sides of pan
place "wraps" inside.
pour sauce over
bake about 20-30 minutes
I also make a cheese mixture and do a milchig kind (cottage cheese, mozzarella cheese, spinach, spices and sauce)

When I'm super lazy, I skip the rolling-up and just layer the wraps and filling like lasagna. Comes out great!

I know a pizza place that makes greek feta wraps- like the ingredients of a greek salad, rolled up in a wrap. they're really yummy.

I make a ton of bean and cheese burritos and freeze them for lunches/suppers that we can eat after the kitchen is turned over. You can heat them in the microwave (which we move to our basement the week before Pesach). With salsa and a salad it's a nice meal.

quessadillas - pizza sauce with cheese or beans, salsa and cheese
u can use like a big eggroll - I put sauteed cabbage, chicken with a soy based sauce, stuff, roll and lightly saute on each side yuuuum

I make quasidillas all the time. Put one wrap in a frying pan (no oil needed), sprinkle grated cheese and cover with another wrap. Keep on hear until the bottom is crisp and then flip over til the other side is crisp. So quick and everyone loves it. DH will have with sour cream and salsa and the kids prefer it plain.

You can make lahmadjin, put the ground meat spiced as for lahmadjin, not much, bake and when is ready fold in half before it gets cold, hope you like it...

Fill with grilled or roasted veggies and feta cheese.
Bake into salad bowls.
Chicken guacamole wraps.
Mexican meat lasagna.

You can cut them up an bake them. Like pita chips. Can spray with cinnamon and sugar or garlic powder and seasoning and serve with chumas
