What's the easiest Challah recipe that yields good results? I prefer a soft, egg Challah, but simplicity of instructions predominates.

I have a great recipe which is really water challah, although everyone thinks it's eggchallah.
I think it's bec. there are no eggs that it seems to be ready much quicker.
It's worth the try!
2 Tbsp. dry yeast
1 c. sugar
1 c. water
Mix. Let sit for 2 minutes to let it bubble.
(I don't always see it bubbling - I just continue. It still comes out just as good. I've been making challah since I was 12.)
Add:
½ c. oil
3 c. water
1 Tbsp. salt
12-14 c. flour
Let it rise. (I rise it overnite in fridge)
Preheat oven to 200 degrees.
Shape. Egg, seeds...
Right away, Place in oven and turn off oven once closed. Leave for 10 minutes.
Then turn on oven onto 350 degrees. Bake 35-45 minutes.

You need 2 bowls
In 1 put 2 pkgs dry yeast or 1/2 pkg fresh
add 1 cup very warm water + 3 eggs & mix
Second bowl 2 tsps salt 1/4 cup sugar (or honey)
2/3 cup oil, 1/2 cup boiling water & mix
now pour 2nd bowl into first leaving oily residue (save oily bowl) & mix
add 7 cups flour (or 3 1/2 whole wheat + 3 1/2 reg) (you can also use bread or hi-gluton flour comes out fluffier) & knead
don't worry too much about consistency just place in oily bowl flip to allow skim coat of oil on both sides and let rest (after first rising the dough will be easier consistency)
use rectangular loaf pans and just roll 5 longish pieces and place one after other (makes sectional and less fuss than shaping plus looks nice too) or roll into small knots put in cupcake pan makes great rolls
Bake 350 about 1/2 hour (good way to test is if sounds hollow when you knock on bottom)
Never bother w/egg coating - time saved
