I just finished making Chinese loempia and I have lots of bamboo shoots left. Any idea what kind of salad I can do with it?

I tend to use them for stir-fry or curry, which go very nicely.
Do you really get fresh bamboo shoots (don't tell me you keep a giant panda in your backyard),
because I've seen only tinned ones, maybe occasionally frozen.
I've seen it served with soupy kind of oriental noodles.
they don't have too much taste on their own, more used for texture.
So you'll probably need more assertive, oriental/soy based dressing if you're using for
salads.
