ISO mushroom salad recipe

I have about 3/4 box of white mushrooms that I need to use up. Anyone with a nice raw mushroom salad recipe? I have very little in the way of other vegetables: half a tomato, half a cucumber, a handful of lettuce leaves and about 1/4 red pepper. And two pounds of carrots and three onions. (I don't know what I was thinking when I did my shopping this week.)

Mushrooms tomatoes diced with lemon juice olive oil salt pepper and fresh crushed garlic or garlic powder. I usually pair it with sautéed liver and onions.

Sounds good. I only have frozen liver and three small onions, though, so sauteed liver won't be happening here.

marinate overnight with sliced onions and tomatoes in red wine vinegar, sugar or agave syrup, salt and just a tad of garlic powder and drizzle with olive oil....

I do lettuce, tomatoes and mushrooms (raw or fried till soft) with the following dressing:

1/2 cup oil,
1/4 cup ketchup
1/4 cup vinegar
1/4 cup sugar
1/4 tsp mustard
1/4 tsp paprika
1/2 tsp salt

and then top with honey glazed almonds and onion croutons (optional these last two)

it is amazingly good and a hit salad!

This is probably a bit late and includes ingredients not on OP's list, but seems to be very popular among my guests.

Oriental mushroom salad
* 1lb white close cap mushrooms
* 1/2 red peppers, seeds and top removed
* 3 salad onions (scallion)
* 2tbsp soy sauce
* 1tbsp apple cider or rice vinegar
* 1 tbsp toasted sesame oil
* sesame seeds (optional)

Wash well and trim the bottom parts of mushroom stems. Chop coarsely (best done first by slicing them and cutting side ways 3-4 times). Chop red peppers and salad onions very finely. Mix all ingredients, and let marinate for at least 1hour. Can be made overnight, but this doesn't freeze.

If you can get ponzu which is citrus-ey soysauce (Mizkan brand has O-U), it's best--use 3tbsp instead of soysauce and vinegar.

Actually, I have all those ingredients except apple cider or rice vinegar. Also, I never got around to making the salad, but the mushrooms still look pretty good. What would best replace the vinegar: white vinegar, white wine vinegar, red wine vinegar, balsamic vinegar or light balsamic vinegar?

Or wait, did you mean apple cider or apple cider vinegar? I have apple cider.

Thanks, Mrs. Bissli! I made the salad this morning and my dh had it for lunch. He was enraptured by it!

I used red wine vinegar instead of rice vinegar. Also, my sesame oil smelled off, so I used peanut oil instead. But it tasted great anyhow.
