Most people use fresh yeast for baking.
I've always been 'scared' to, so I use packaged dried yeast which you just mix in with the flour. Find a recipe that you feel comfortable with, using whatever type of yeast you feel most comfortable using. Do you have one yet? if you want, I could post mine.

It really depends on your recipe. Do you have a recipe? Most call for one or the other, though you can substitue, if you know how. And some recipes that call for the active dry just say to mix it in, but I've had more success with "proofing" the yeast in a warm oven with sugar and warm water for five minutes. But again, that's just my recipe. There are so many ways. Find a recipe that you like or want to try and just follow the instructions! If the recipe doesn't tell you what kind of yeast or what to do with it, find a different recipe! (Any recipe without enough instructions is bound to come out bad - with any kind of cooking or baking!!!)
