I would love a good recipe for sweetbread. DH loves the sweetbread appetizer they serve in restaurants, with the brown sauce and pearl onions.
I need specific instructions please, I know it's a whole to do with the preps before actually cooking the sweetbread.

yep I know, actually some say it's the throat, but it's delicious anyway you call it!

yes batya , I used to think so too, but according to one cookbook I read , it said that it's either the thymus gland(I think) or the brain, I guess maybe it's interchangeable
leMarais in Manhattan used to make it as an appetizer, then they stopped and we had it again in this new Grill on Madison Ave(???). I know you're supposed to boil, then refrigerate overnight, or some say a few hours with a weight on top, but I'm not sure and don't want to mess it up as it's quite pricey for a small piece.

Mike's Bistro on 72nd street makes a sweetbreads appetizer. Never had it, but their food is AMAZING!!! Merlot-braised duck gnocchi...
Best kosher restaurant in the city, I think.

Ok I'm not eating THAT next time I see it on the menu! I always wondered what it was. Meat & chicken, ok. No tougue, brains etc for me. I can handle chopped liver though.

Dh would've never eaten tongue and even steak, until one day he had tongue in someone 's house and loved it. I eventually got him into steak. Then we went to La Marais with someone who ordered the sweetbread, dh tasted it and loved it! It really is delicious, tongue OTOH I'm not a fan of.
BTW, I wasn't that impressed with Mike's Bistro, very pricey and the food isn't that great and the portions are pretty small. Their cocktails are pretty good though, they make a great long island ice tea!

I don't know about the restaurant sweetbreads, but I can give you my mother's recipe:
Saute chopped onions on a small flame, covered, so they soften but don't brown. Cube the sweetbreads (this is done most easily when they're frozen), add, cook on low flame. Make a roux/einbren with flour and oil, add some water and add to the sweetbreads. My mother stretches the sweetbreads with canned mushrooms.
I loooovvvee sweetbreads, who cares what part of the animal they're from? (And for the record, I don't believe it's brains.)

Thanks sarahd! And no, it's not brains, althoough brains are similar. Sweetbreads that you buy nowadays are the thymus gland which I believe is located in the throat.

SOLO restaurant in Manhattan in Sony building has delicious food. Sweetbread being one of their appetizers. First time I went I said "now I know what Gan Eden must be like..." (by the way, SOLO is a part of PRIME GRILL)

wow, I have never had sweet breads but I am definitly going to go to a resteraunt in the near futur to try it - sounds yum!
