How do you make soft meatballs? sometimes they come out like rocks - I would like them soft though!

mine come out soft and yummy.
this is my recipe.
1 lb. ground chicken
1 lb. ground turkey
1 lb. ground meat
3 eggs
3 table spoons ketchup
black pepper to taste.
mix it very very well.
(I freeze ready made mixture of 1 lb. so my cooking instructions is for one lb.)
when ready to cook:
1 can tomato sauce
1/2 can of water
1 cup sugar (more or less acording to your taste)
black pepper to taste
let it bubble, drop in meat balls one by one, cover and let cook for an hour and a half on a medium flame
sometimes I need it rushed up, so I put more of the tomato sauce mixture and let it cook on high for about a half hour.
