5 oz. fresh baby spinach leaves
1 box grape tomatoes
1 bunch endive mushrooms or 8-10 fresh white mushrooms, sliced
1/4 red onion, sliced
4-5 large figs, sliced
Handful sesame-covered peanuts (optional)
Dressing:
1/3 cup olive oil
1/4 cup sherry
1 clove garlic, crushed
1 pinch salt
Pepper
1 1/2 Tbsp honey
1 tsp lemon juice

Combine salad ingredients. In a container, combine dressing ingredients and shake well. Top with glazed salmon cubes (recipe below).

3/4 lb. salmon fillet
2 Tbsp honey
2 Tbsp apricot jam
1 tsp soy sauce

Combine honey, apricot jam and soy sauce. Coat salmon cubes with glaze and bake at 350 for 15 minutes.

YES, THANKS A TON Very Happy DH will be happy, I told him I was making it for lunch and then couldn't find it.
