Fish with potatoes and fennel
3/4 lb diced potatoes
1/2 fennel bulb, sliced
2 diced carrots
1 diced celery stalk
cut up red onion
2 bay leaves
salt and pepper to tate
4 fish fillets
1/4 cup dry white wine
1 T flour
2 T parsley
half lemon, cut up
Preheat oven to 425 and mix everything but flour, oil, wine, lemon and the fish and put into a pan. Let cook about half an hour.
Add the fish and pour the wine on top. Sprinkle with oil and flour and broil about 10 minutes. Serve with lemon.
