I am crazy busy with work over the next few weeks, so I need to start thinking NOW about R'H. I always find that the side dishes are the hardest part- much more time consuming than the meat, soup, etc. Can anyone give me ideas for side dishes that freeze well? I've made pumpkin/squash kugel in advance, as well as potato kugel (freeze it raw), and that's worked out. Any other ideas? I am not so into "sweet" kugels (apple, cranberry, etc).

ORZO
Sautee lots of onions mushrooms and peppers in 1/4 cup margarine or olive oil till soft. Cook box of orzo according to directions on the box. Mix veggies with orzo. Spice with onion powder, pepper and salt. Divide into two 8*8 pans and bake at 350 for 1/2 hour. Serve one pan and freeze the second. It freezes great, and it's SO delicious.

maybe knishes, or mushroom puff, you can freeze those raw. you can also freeze matzo balls, they freeze very well.

Meat loaf, meat balls & you can even prepare chicken & put it in the freezer & when your ready to use it just put it in the oven.

As Nechoma Greisman says in her book, test the freezing by freezing a small amount of something. Try it for yourself to see how it froze.
I have had luck freezing many/most side dishes.
Lately though I've been cooking fresh but cooking simpler.
But you do what works for you.
