Quick and Easy Bagels
1/2 cup warm water
1 package dry yeast
2 Tbsp. sugar
1 cup apple juice
2 tsps. salt
4 1/2 cups flour
Poppy or Sesame seeds (optional)
Pour warm water into bowl. Sprinkle yeast and stir until dissolved. Add apple juice, sugar, salt and 4 cups of flour. Kneed about 10 minutes and add flour as needed until smooth and elastic.
Place in greased bowl. Cover and let rise in warm place for 15 minutes.
Punch down and roll on lightly floured board into a 9x5 rectangle about 1 inch thick. Cut into 12 equal strips, 5 inches long. Roll each strip into 1/2 inch rope about 6 inches long. Place on greased baking sheet and let rise in warm place for 20 minutes.
Preheat oven to 375.
Bring 1 gallon of water to boil. Lower heat and place 4 bagels in simmering water. When bagels float to the top after 3-4 minutes, remove and place on ungreased baking sheet.
Repeat for all remaining bagels. Sprinkle with seeds if desired.
Bake for 30-35 minutes until brown.
Note: to make this recipe hamotzi, substitute 1 cup warm water for 1 cup apple juice.
Note: Please send Mommy912 at least 3 plain bagels for typing out this very long recipe.

O.k they looked and tasted great. The only problem is that some parts were over done and other parts were underdone? Weird right?
Also the bagels did not sink to the bottom of the pot. They floated the whole time.
