Applesauce ... banana ices ... lemon ices ... frozen smoothies ... baked apples or pears ... fruit salad ... flavored meringues ... now I'm getting hungry. Yup, all fruit!

a lot of fruit! my mom bought really cute baby pineapples and a tiny watermelon for my kids..they loved it!

THis year I made lemon squares, strawberry ice cream, choc. chip cookies (that taste suprisingly 'real') and lemon merangue pie. So far.

We make a LOT of good things! I have made the following successfully:

strawberry ice cream with peeled strawberries

nutty ice cream with crust

fruit sorbets with: passion fruit in season or kiwi; pineapple and mango

apple sauce, with variations: pears, orange, lemons, and ginger

I also bake, from mixes or from scratch, semi successfully

I typed this before yom tov b/c I put my cookbook away - it's from KBD.

5 eggs
8 oz unsweetened choc (I used bittersweet)
4 oz semisweet choc
1/2 cup water
1 1/3 cups sugar, divided (I added a bit more sugar)
1 cup margarine (I used oil)

9 inch springform pan, sprayed (I used 9x13)
350 oven

place eggs on stovetop, not over flame. just enough to warm them.
melt choc, water, 1 cup sugar, margarine. let cool.
beat eggs and 1/3 cup sugar until tripled. fold into choc mixture

bake 30-35 mins.

Lemon ice cream.

sugar water from 3 cups sugar and 4 cups water.
3/4 cup lemon juice (ie. 3-4 lemons)
2 egg whites beaten

Mix lemon juice and sugar water. Freeze overnight or for about 6-8 hrs. Mixture should be only partially frozen (ie. slushy). Add 2 stiffly beaten egg whites and return to freezer. You might need to rebeat it or even just mix with a spoon before totally frozen cuz it separates sometimes.

Enjoy! Fresh and sweet and refreshing.

I made a really good Strawberry Ice-Cream.
(I don't use raw eggs... )

So:

A box of Fresh strawberries, Mashed.
2 small boxes of parve Rich's Whip
2-3 small packets of Vanilla Sugar (or vanilla extract and 3 tsp. sugar)


1) Whip up the Rich's Whip with the vanilla until stiff.
2) Fold in the mashed strawberries.

Freeze.
Take out of the freezer about 10 minutes before you're ready to serve.

So Easy!
I made this for the first day of YomTov, and my family LOVED it!!!
