I have to share my 1st Yom Tov menu!
Round Maple and Raisin Challah (my very 1st challah and it looks better than expected!)
Matzo Ball Soup
Pomegranate Martinis (we never used our Martini glasses so we decided to take them out for this occasion)
Gefilte with honey
Something with a fish head (my mom is making it!)
Apple and Pomegranate Salad
Apricot Chicken
Candied Yams (DH’s request!)
Apple Kugel with strawberries and rhubarb
Honey Cake
I’m very excited to have my 1st holiday dinner at home!!!

So I don't have the meals all worked out just yet... but this is what I have cooked so far...
Stuffed eggplant with groud beef and green peppers and onions
Oven baked southern fried chicken
beef stew
chicken soup
potato kugel
ice cream cake
honey cake
and my freezer is beyond stuffed so I will have to save the rest of the cooking for thurs night or erev yom tov...

Shabbos Day: (having 5 boys)
sweet and tangy salmon
salmon gefilte fish sushi
hot sauteed liver topped with chinese noodles
chulenth mushrooms
potato kugel
fresh pastrami
flatbread salad
cole slaw
strawberry short cake
honey cookies
Motzei Shabbos:
pickeled salmon
potato burekas and mushroom sauce (appetizer)
pastrami/kishka stuffed capons
carrot muffins
rice wit
hearts of palm salad
cookies n cream ice cream
Sunday:
salmon salad
meat knishes in mushroom sauce (appetizer)
pickled brisket/ corn beef
broccoli kugel
jeweled orzo
tomato salad
mushroom salad
lemon ices
honey cookies
....and I didn't even go shopping yet! HELP!!!

Wow Lakewood mom! With a menu like that id like to send our husbands to uman and come with the kids!
Gluck with all that! Send over some leftovers!
Im only making 1 meal for my in laws motzei shabbos and all I know so far is the pomegranite salad and the blueberry crumble cake. I may do borekas and mushroom sauce and past kishka stuffed capons. now I need a fish and soup!!
I better start cracking!

Here is a salad I make during the day, with the leftover simanim
It is a HUGE hit! (you may need to adjust amounts, this makes a ton)
1 head lettuce
1 bag spinach
seeds of 1/2 pomegranate
1/2 golden delicious apple, in small chunks (with peel)
1/2 red apple (same)
1/4 cup chopped dates
grated carrot
grated cabbage or leek
pumpkin seeds
dressing:
1/4 cup oil
2 tsp vinegar
1 tsp minced scallion
2 tsp honey
1 tsp mustard
1/2 tsp salt
1/4 tsp garlic
pinch of cayenne pepper
I also sometimes do this one:
Lettuce
Raisins
Canned peaches, halfs
Celery, sliced thin
And we say, "Lettuce half a peachy raisin celery" (let us have a peachy raise in salary) 8)
Corny, but fun

My neighbor taught me a great trick for yom tov
Since I am trying to cut back on trans-fats, I dont like serving burekas...
She makes blintzes on YT - she makes the crepes, and lets her kids fill them with mashed potatoes, it is a great activity, and they love doing it.
You could even make the crepes ahead of time, and just fill them and make the sauce on YT

You should say shechiyanu on new jewlery, regardless of the time of year, as well as new clothes (not shoes) or anything new that makes us especially happy.
it is a minhag to wear new clothes on the second night of RH and to eat a new fruit, and say the shecheyanu on the fruit. I never remember what we do with the bracha on the candles and kiddush and have to be reminded every year .
Growing up the rimon/pomegranate was our new fruit on the second night, and we'd occasionally add other things as well. I know many people have the minhag to have several new fruits on the second night.

Strawberry Mango Salad:
1 bad lettuce
strawberries
mango red onion
craisins
slivered almonds
Dressing-
1/2 cup oil
1/2 cup sugar
1/2 cup vinegar
1 tablespoon mustard
Although there's vinegar in the dressing, it's very sweet.
Salmon gefilte fish sushi:
very eay! defrost a loaf of salmon gefilte fish. Mash it onto the seaweed. Roll it and bake it covered until fish looks cooked. Then slice it. I use a chrain/mayo mixture as a dip.
Chulenth rice---lol...it was a mistake! Supposed to say chulent. The extra words are from "rice and mushrooms!"
Flatbread salad:
1 bag lettuce
cherry tomatoes
everything flatbread
dressing:
1 garlic cube
1 tablespoon sugar
1/2 cup oil
1/2 teaspoon soy sauce
1 tsp. vinegar, mustard, salt, and pepper
shliska- maybe use dark chicken cutlets and fold them over.
Purplpen- make my salmon recipe for fish
Now I MUST start cooking!!!

Don't have all the sides worked out, but here are the main dishes:
Fri night
chicken gumbo soup
Shepherd's pie
angel food cake sliced in layers with banana pudding, sliced bananas and sliced strawberries in between layers, topped with warm strawberry preserves
Sat lunch
Grilled chicken, pineapple, and basil sandwiches
Pasta salad with broccoli, cucumber, tomato
Layered refrigerated chocolate desert (basically a chocolate cookie base with a pareve cream cheese layer, whipped cream, and raspberry sauce)
Sat. Night
Brisket
Crispy onion potatoes
Carrots and parsnips
Creamed spinach
Honey cake
Sun Lunch
Gefilte fish in tomato sauce (my DH's favorite)
All the leftovers
