I left my KBD Entertains at my mom's, and she is out of town. Does anyone have the chocolate cookie recipe. (I left all my cookbooks there, so I may be mistaken and the recipe might be in another cookbook). It's a soft almost brownie style cookie, not sure if that helps. It's been a while since I have made them. Thanks!

Double Chocolate Cookies (KBD Entertains, p. 289, GREAT RECIPE!)

Ingredients:

-1 cup (2 sticks) margarine or butter, at room temperature
-1 1/2 cups sugar
-2 large eggs
-2 teaspoons pure vanilla extract
-2 cups all-purpose flour
-2/3 cup Dutch processed cocoa powder
-3/4 teaspoon baking soda
-1/4 teaspoon salt
-2 cups semi-sweet chocolate chips

1. Preheat oven to 350 F.
2. Line 2 cookie sheets with parchment paper. Set aside.
3. In the bowl of a mixer, at medium speed, beat the margarine or butter with the sugar until fluffy.
4. Scrape down the sides of the bowl. Mix well. Add the eggs and vanilla. Beat until mixed.
5. In a separate bowl mix the flour, cocoa, baking soda, and salt. Toss with a fork.
6. Add the flour mixture into the margarine mixture, beating until incorporated.
7. Mix in the chocolate chips.
8. Scoop up rounded teaspoons into your hand and roll into a ball. Place 1 1/2 inches apart on prepared sheets and flatten each dough ball slightly.
9. Bake 10-12 minutes until they no longer look went in the center.
10. Cool for 5 minutes on cookie sheets, then transfer them to rack to cool completely.

Yield: 75 medium sized cookies

I don't think that was the one she wanted (was it?), but that's also a WONDERFUL recipe.

If you are a peanut butter lover, the KBD peanut butter cookies - in the kids cookbook - are great! The recipe is really small so make a double batch - it still only makes about 2 large cookie sheets.
