We like this (yummy!) recipe for corn chowder from Norene's Healthy Kitchen:
1 T. olive oil
2 medium onions, chopped
2 stalks celery, chopped
1 red pepper, chopped
4 cups fresh or frozen corn kernels
1 med. potato, peeled & chopped
2 c. broccoli florets
3 c. vegetable broth (I use water & add MSG free chicken soup mix when it boils)
1 tsp. salt
1/2 tsp. freshly ground black pepper
1/2 tsp. dried thyme
1 tsp. dried basil
1 c. skim milk or soy milk, or more if you like it more liquidy like me
Heat oil in a large pot on med. heat. Add onions, celery, and red pepper; saute for 5 minutes. Add corn and potato and cook 4-5 minutes longer, stirring occasionally.
Add remaining ingredients, except milk, and bring to a boil. Reduce heat to low, cover, and simmer 10-12 minutes or until potatoes are tender. Remove from heat and cool slightly.
Using an immersion blender, partially puree the soup. Add the the milk and reheat gently on low heat. Don't bring to a boil or the soup may curdle. If soup is too thick, add a little more milk.
Note: If I am freezing or reheating the soup, I don't add the milk until I'm ready to heat it up.
