| Does anyone have any idea what can be done with a (semi) soggy bag of mixed salad that sat in the fridge a bit too long. This has happened to me more than once. Is there anything edible I can make out of it?

This won't help for this time, but here is a great tip that really works to get more longevity out of the salad bags once they are open:
Put a good napkin or 1/2 paper towel in with the salad. It will absorb the excess water and keep the greens fresh for a much longer time than otherwise.

| if the lettuce is still good just has that old smell, you can use a very thick and flavorful dressing (mayo type) to hide the flavor, and still eat it.

| If it's slimy, dump it. If not, freeze the veggies and use in soup. I make a nice veggie broth as a soup base by collecting bits and pieces of past-their-prime veggies and veggie trimmings (the center part of bell peppers, the fibrous gunk in the middle of winter squashes, e.g.) in a freezer bag. When I have enough, I boil them up for a couple of hours in a pot of water with some bay leaf. I strain out the solids and use the broth as a base for soup. That way I don't feel guilty about throwing out veggies that are esthetically unappealing but not actually toxic.
