Healthy muffin recipe please

I made some delicious healthy muffins a long time ago and don't have the recipe anymore Sad

Does anyone have a recipe for tasty, healthy muffins? I'd prefer something without white flour and as little sugar as possible.

let's see if I can remember this offhand--

1 6 oz bag ground almonds
1/2 cup honey
1/2 cup applesauce
3 eggs
cinnamon (just pour some in. not too much...)
a dash of pure vanilla extract (check the ingredients, many have corn syrup. if you want healthy, don't use that kind)
raisins/blueberries/chopped apples

bake @ 375 deg for approx 20 minutes. with berries or apples the baking time may be longer.

These are YUM.

¾ c oats
1 c soy + tsp lemon juice
1 ¼ c whole wheat flour
1 ½ tsp baking powder
½ tsp baking soda
¼ tsp cinnamon
¼ tsp salt
2/3 c chopped walnuts
1/3 c canola oil
1 egg, beaten
1/3 c brown sugar
Tsp vanilla extract
Chocolate chips
Wheat germ

Soak oats and soy milk.
Mix egg, oil, brown sugar & vanilla.
Add flour ingredients. Do not overmix.
Spray PAM, fill 2/3 of muffin holders.
Bake at 425 for 11-15 until stick comes out clean.

im also looking for good muffin recipes. not too health-nutty, I want it to taste yum, but not disgustingly unhealthy either. are carrot muffins generally tasty or totally not kid friendly? I found a carrot muffin recipe by susie fishbein kids in the kitchen and am debating making these. any other healthy-enuf-but-not-dietetic ideas, anyone? banana muffins? I dunno.

I have a delicious recipe that is chock full of omega 3, and other wonderful vitamins and nutrients. They are not dietetic, just very nutritious.
(Although I make them for my dd who needs extra nutrients, my super picky dh steals them from the freezer because he says that they are the best muffins ever.)

Bran Flax Muffins

1-1/2 cups whole wheat pastry flour OR regular white flour
3/4 cup golden flaxseed meal (ground flax seeds)
3/4 cup oat bran
1 cup brown sugar
2 tsp baking soda

2 tsp cinnamon
1-1/2 cups finely shredded carrots
2 peeled and shredded apples
1/2 cup raisins (optional)
1 cup chopped nuts
3/4 cup soy or almond milk
2 beaten eggs

Mix together flour, flaxseed meal, oat bran, brown sugar, baking soda, baking powder, salt and cinnamon in a large bowl. Stir in carrots, apples, raisins (if desired) and nuts. Combine milk, beaten eggs and vanilla. Pour liquid ingredients into dry ingredients. Stir until ingredients are moistened. Do not over mix. Fill muffin cups 3/4 full. Bake at 350 degrees F for 15-20 minutes.

NOTES:
You can buy ground flaxseed meal from the fridge in the health food store.
If I have the time though, I grind them myself.
(Flaxseeds have a ton of Omega 3's. Once the seeds are ground into meal, they start losing the Omega 3 properties really quickly. So you can grind your own meal in a blender, and refrigerate any leftover meal ASAP.)

I use blanched almonds for the nuts. Extra calcium from the almonds, and the blanching adds more value. (I cheat and buy the almonds already blanched.)

I omit the raisins.

My favorite banana muffin recipe these days is half white flour and half healthy stuff (my last batch I combined wheat germ, bran and oatmeal) -- I think I make it different every time, experimenting with whole wheat flour, adding raisins or chocolate chips...comes out amazing no matter what I put in it! Let me know if you want the recipe.
