My son was allergic to eggs, milk, wheat and soy. I did a lot of my own baking, using spelt flour and egg replacer. If she can't have gluten, can you process your own oats to make oat flour (a lot of packaged oat flour has gluten). Flapjacks, cookies - even chocolate chip cookies which really taste good, cake. Gedilla makes a corn pop snack which has no egg or wheat or soy, although I am not sure which oils your daughter is allergic to.
For lunch, corn thins or rice cakes can be a base for sandwiches - chumous, egg salad. Use potato or corn starch as a thickener for falafel (I adapted DefyGravity's recipe on here for my son's allergies and they were delicious), or get a gluten free pancake mix, pizza base/muffin mix - Orgran makes some. They also make corn, rice and millet pasta - all egg, gluten, soy, yeast etc. free.
