Can someone post this recipe?
It's a recipe for butternut squash french fries from KBD Lightens Up.

I know the basic idea, but I want to see what spices she uses, I remember there is cayenne pepper and a few other things......

thank you!

1 large butternut squash, peeled
pam
1 tsp. coarse salt
1/2 tsp. cayenne pepper
1/2 tsp. paprika
1/2 tsp. garlic powder
1/4 tsp. chili powder
1/4 tsp. oregano
1/8 tsp. dry mustard powder

Preheat oven to 425. Line a jelly roll pan with parchment.

Using a sharp knife, carefully cut squash in half lengthwise. Discard seeds. Thinly slice into french fry shapes.

Place squash in a single layer on pan. Spray liberally with pam.

In a large bowl, mix spices. Toss fries into the spice mixture to coat all sides. Return in a single layer to the pan.

Roast uncovered for 35-40 minutes; cooking time may be shorter for skinny fries, longer for fatter ones. Shake pan halfway through cooking. Fries are done when they are crisp. Serve hot.

This recipe sounds delicious and I'd love to try it. But how do you guys cut the squash into 'fries'? I have such a hard time cutting butternut squash, no matter how strong and sharp my knife is. Any magic solutions that can save my wrist?

I wish I had a magic solution! I also find cutting butternut squash to be a huge pain, so I rarely make these fries or any recipe that involves cutting butternut squash into small pieces. Cutting the squash into fries is definitely doable, it's just very tedious.

I just saw this post now. (Making butternut squash fries as we speak.)
Just wanted to let you know that you can buy a $15 french fry attachment for the Braun food processor. The fries come out on the small size, but even and neat. Using it makes french fry making a snap.

Just tried these for the first time. Very tasty, but also very spicy! Definitely reduce cayenne pepper if serving to children.

These are delicious, and I love spicy, but my DH and kids don't like butternut squash, so I can eat an entire squash myself Wink
