Corn/squash muffins with blueberries!

I just made these and they are great.

1 cup cornmeal
1 1/4 cup flour (I used whole wheat white flour)
1 1/4 cup sugar
1 1/2 T. baking powder
1/2 tsp salt
1 cup pureed butternut squash
2 eggs
1 cup soy milk
3/4 cup oil
1 1/2 cups fresh blueberries

Preheat oven to 350.
Mix dry ingredients in a large bowl. Add remaining ingredients, except blueberries. When mixed well, stir in the blueberries.
Line muffin pans or grease. Fill half way with batter. Bake for around 20 minutes. (I baked them on convection)

Freezes very well.

I made about 20 muffins with this batter.

I am glad you enjoyed. You can make them w/o the berries and call them a side dish if you want.

Thanks for the recipe! I made these muffins yesterday and they are delicious! I made a couple minor changes: I used a little under 1 cup sugar (instead of 1 1/4), and I used applesauce instead of oil. Also, I added pecans. Healthy and yummy!
