chop up eggplant, mix with beaten egg and breadcrumbs, fry, throw in sauce and cheese, mix, and there ya go!

Using some new ideas from this site!

Sun- baked mock fried chicken cutlets (panko crumbs), garlic roasted veggies (they were more mushy than roasted but were delicious), sticky brown rice
Mon- cranberry minute steak, oven farfel, salad
Tues- Honey chicken (quick and kosher), potato fries (homemade no oil), butternut squash soup
Wed- DH not home so I'll prob have pizza bagels with the kiddies
Thur- Either buy pizza or omlette sandwiches, salad and mushroom barley soup

beauty and the beast, your recipe for parmigan express (I know the spelling is off, sorry) is like the eggplant version of baked ziti? same concept? it sounds pretty cool!

K so my week is gonna be gr8
Sun- we went out to eat
Mon- dh went out with some of his guy friends to celebrate a bday or something
Tue- chicken faijtas told dh to go buy spanish rice from somewhere
Wens- Wedding
Thurs- Pizza from Pizza Time
Yay I dont have to cook at all well tue Ill get the chicken already spiced from Pomegranate so ill have to put it in the pan to cook but thats it. YAY.

I guess u can look at it like that! but instead of cooking the eggplant, u fry it in small chunks!

Finally beginning to get my menus done on motzai shabbos so I KNOW what I'm making ahead of time. embarrassed

Heres what we have had/will be having this week:

Sun - leftovers from Shabbos
Monday - Addictive Sweet Potato Burritos, Green Pepper Tomato Salad
Tuesday - Indian Chicken Curry, Basmati Rice, Broccoli with Garlic Butter and Cashews
Wednesday - Spanish Moroccan Fish, Quinoa Side Dish
Thursday - Cheese Blintzes or kugel, salad (either cucumber salad, guacamole, or waldorf)

The rib-eye steaks are another one of OldYoung's recipes.

4-6 ribeye steaks
onion soup mix OR few slivers of onion + crushed garlic + salt
2 large onions, sliced into rings
portabello mushrooms, sliced
oil
1/4 c. teriyaki sauce
1/4 c. white wine
1 t. sugar
3 cloves garlic, crushed

Place steaks in a pan. Sprinkle with onion soup mix (or place a few small slivers of onion under steak, smear top of steal with some crushed garlic, and sprinkle with salt), cover tightly, and bake at 350 for 2 hours.
Meanwhile, saute onions and mushrooms in oil on a medium flame, until soft. Add remaining ingredients and simmer for a few minutes. When the steaks are done baking, remove from oven and pour mushroom/onion mixture over. Cover tightly, and bake for another hour at 250.

You can substitue the rib-eye with club, minute or filet steaks.
And it's okay to omit the portobello mushrooms in a pinch.

I haven't tried the coca cola sauce over steaks but I am sure that it would taste good.

To make crusty garlic bread, I buy an Italian or French roll of bread (like a long baguette) or a small whole loaf of bread. Make slits on top. Smear with olive oil, crushed garlic and salt. Bake at high temp until crusty.

Mon- Aroz Con Pollo (Spanish chicken and rice) and salsa salad (tossed)
Tues- deli/veg subs
Wed- broccoli cheddar pasta, salmon, spaghetti squash
Thurs- not really sure yet...

That steak recipe sounds great, besides for one thing. I like the meat rear-crispy on the outside (sort of) reddish inside. Is there a way to modify this recipe or it won't work?

Also I'm afraid of too much wine in anything. I once made the turkey marsala from KBD short on time & we had to dump it because of the intense wine taste. But I have done a bit of wine in fish & other things, so I need to make sure this isn't too much for us.

What's in your coca cola sauce?

My menu this week: (I'm organized for a change)

Mon: Mexican turkey coldcut salad, grilled chicken w/ chinese chicken sauce, grilled portabella mushrooms, apple strawberry compote

Tue: Butternut squash soup w/ terra sticks, fajita chicken, apple strawberry compote

Wed: Rib steaks (IDK how yet), brocolli w/ mustard, baked sweet potato fries, 3 color fruit cup w/ jello

Thur: Creamy asparagus soup, Baked chicken legs w/ cornflake crumbs, ra moms sticky rice, apple strawberry compote.

First of all, thanks OldYoung for the recipes! All your recipes are always a hit.

JudyJudith, I don't think you can do a crispy on the outside rare steak in the oven. (except for a pan sear method where you sear on the stove top first, then place the frying pan with the steaks in the oven. this method is quick though.)

The steak IS amazing. LOL It is NOT a crispy steak recipe, though. It's a soft, saucey, melt-in-your-mouth kind of meat. I don't think it has such a strong wine flavor (more teriyaki-tasting). You can probably adjust the wine to your taste, and I would even try using 2 T water, and 2 wine if you're really very nervous. (Warning- I never tried it, but I bet it would work.) I was told that the original recipe called for balsamic vinegar- so maybe use that instead if you like the taste?

If I want to pan sear the meat- should I boil the sauce & serve it over, or pour it over the meat in the skillet before flipping it?

It you want it saucy, boil and pour over meat. If you want the sauce drop browned and sticking to the steak pour it over the steak during the last 2 minutes it's in the frying pan.
Btw, the coca cola sauce is very sweet.

Thanks ra mom for directing me to the post.

I marinated it in the sauce all day (didn't do the onions) & did it on the skillet.

Dh & I both loved it.
