| Would you like a basil couscous salad recipe? I make it Parve at times, and at other times Milchig. Though it calls for fresh basil, I end up substituting with dried basil a lot. (The couscous part is really easy to make. I don't even use a pot anymore. I just take boiling water from the perculator or tea kettle, and place it in a covered container together with the couscous. And poof, ready in minutes.)

Sorry, I don't have an exact recipe. I use mayo, a bit of vinegar, water, salt, pepper, sugar, and a lot of garlic (if you want it a little deli salad type, I add mustard and omit the sugar).

I just made this really authentic tasting Caesar salad dressing for Shabbos, and I sampled it with some greens. It's delicious. It's has a thin consistancy, kind of like the ones at the restaurants.
Caesar Salad Dressing
1 c soy milk (I used almond milk)
1/2 c mayonnaise
5 lg garlic cloves, quartered
3 Tbsp lemon juice
1 Tbsp Dijon mustard
1/2 tsp honey
1 tsp cider vinegar
salt and pepper to taste
Place the ingredients in a blender. Cover. Blend on high speed for 20 seconds, stopping once to scrape down the sides, using a rubber spatula. Taste and adjust the balance of seasonings. Makes 1-3/4 cup.
(I just used an immersion blender right in my measuring cup.)
I also have a thicker mayo version... now if I can only find the recipe with the exact measurements...

| Lightly steam broccoli, cauliflower, and carrots (may want them softer) and combine with baby carrots, sauteed mushrooms, italian green beans. Marinate in Italian salad dressing and some of the can juices. Easy and wonderful. I don't have quantities but you can adjust based on budget, likes and dislikes, etc.
