We save cocoa, potato starch, oil, vinegar, and salt from year to year.

Cocoa, vinegar and salt cost exactly the same in Israel for Pesach and during the year - why would you save them?

For 8 people I buy
3 bottles oil
120 eggs
7 kilo sugar
500g cocoa
1 bottle lemon juice
300g ground hazelnuts
400g ground walnuts

We don't buy pudding mix (what do you do with all of that?)

Habit? They certainly weren't the same price for the first 8 years I made Pesach (in the US).

We often turn over before we do our big shopping and I have been known to bake a cake or make a salad right away. Two years ago there was no eida vinager in the stores that we shop in. I have the cabinet space in my Pesach cabinets and like knowing that we have some of what we need.

You should just know that cocoa can get buggy during an Israeli summer - BTDT (nothing to do with Pesach).

We went through 5 dozen (60) eggs for 4 people last year (almost no guests). Probably would have gone through more but I baked less than I thought I would (ran out of time). I'm still buying 10 dozen (120) again this year.

Wow, you all use a LOT of eggs!

Mind you, we don't make potato kugel or cakes or anything like that and we don't have eggs at the seder. Might have a few in a salad and hard boiled for the kids when going out. And I might make one quiche and and one hol hamoed meal with eggs, MAYBE some egg salad for on matza. But so many dozen? Wow! Marion's 5 dozen is closer and that's on the higher side even then! Yeah we don't have 8 people plus a couple of guests but even if we did it wouldn't be 30 or even 20!

I know we have more options with kitniyot etc but we don't eat that much of it to make a huge difference.

extras what extras? this is the list I made last year after pesach I counted up what I used last year so I know what I need for this year

besides if there is extra I use these ing. all year round

I found a recipe for a cake on here somewhere and it calls for pudding mix last year it was basically the only cake my kids touched they loved it

FOUND IT! Very Happy

Good and easy

Vanilla Pudding Cake

8 eggs separated
1 cup sugar
3/4 cup potato starch
1/2 cup oil
2 Tbs. orange juice
1 box instant vanilla pudding

Beat egg whites to soft peaks, add 1/2 cup sugar beat until stiff and refrigerate.
Beat yolks with other 1/2 cup sugar, add rest of ing.
Fold in egg whites.
Bake in tube pan 350*, 1 hour.

I used a 9x13 pan

Unbelievable Brownies

4 large eggs
2 cups sugar
1 cup vegetable oil
1/2 salt
3/4 cocoa powder (Dutch process)
1 cup potato starch
1/2 cup semi-sweet chocolate chips (optional)

Preheat oven at 350. Grease a 11 x 7 inch brownie pan. Set aside.
In the bowl of an electric mixer, beat the eggs and sugar until smooth. Add the oil and salt. Mix. Sprinkle in the cocoa powder and mix to make the batter chocolaty. Add the potato starch and mix to combine. Scrape down the sides with a spatula. Stir in the chocolate chips if using.
Pour unto prepared pan. Bake for 35-40 minutes. Allow to cool before serving.

Yes, IIRC they are chewy.

The best idea is to keep a Pesach notebook and right down whatever you buy from year to year so you will have it for the next year.
