I have a bunch of turnips that I bought on a whim, for cheap. and now I need to find a recipe or something to do with them before they go off.
What suggestions do you have to do with a TON of turnips? (Close to 4 or 5 lbs.) So not recipes of "a million things and one turnip." Because then it would take a LOT of dishes to be able to finish up these turnips.
Do turnips freeze well?

I always put at least one in my chicken soup.
I always put at least one in my parve vegatable soup.
Turnip "pickle": slice the turnips and let sit in salty lemon juice till "done". Fabulous.
Turnip salad (see my picture in your other thread).
At Zion restaurant in Kerem HaTeimanim, I heard (30+ years ago) they made a dessert out of turnips, but I have no idea what it was.

Your turnip salad sounds good, but then that means I need to buy 3 kilos of raddish, three kilos of kohlrabi, in order to use up my 3 kilos of turnips.

Rapes in Pottage [or Carrots or Parsnips]
1 lb turnips, carrots, or parsnips (I made a mix of carrots and turnips)
2 c chicken broth
1/2 lb onions
6 threads saffron
3/4 t salt
powder douce: 2 t sugar, 3/8 t cinnamon, 3/8 t ginger
Wash, peel, and quarter turnips (or cut into eighths if they are large), cover with boiling water and parboil for 15 minutes. If you are using carrots or parsnips, clean them and cut them up into large bite-sized pieces and parboil 10 minutes. Mince onions. Drain turnips, carrots, or parsnips, and put them with onions and chicken broth in a pot and bring to a boil. Crush saffron into about 1 t of the broth and add seasonings to pottage. Cook another 15-20 minutes, until turnips or carrots are soft to a fork and some of the liquid is boiled down.
I served it with couscous.
BTW, you can also make a simple mashed turnip dish, like you would make mashed potatoes... _________________

Mah pitom. You don't have to use all the turnips in the same recipe! Yesha gave a couple of great ideas, so you can have a couple of warm and a couple of cold turnip dishes. Yum! They are very healthy and low cal... until you add oil LOL.

| if I dont own any saffron, is there any replacement I can use? I wanted to buy once at the shuk, and it was 40 shekel for a tiny little package.

(Even uriel likes them- he calls them apples.)

| Soak them in salty lemon juice... they rise to new heights. I learned that from my Tunesian ladies when I was a morah chayelet.

| I just finished the John Steinbeck book "East of Eden" and one of the dishes mentioned in the book was mashed turnip casserole with cheese on top!

I ended up making a really yummy mock coleslaw.
4 turnips grated
3 carrots grated
2 tart apples cut up
Mayo
OJ
Sugar
Salt.
It came out really awesome....
