Garlic dip:

Take 2 whole garlic heads, cut off the top and drizzle with olive oil. Wrap in foil (or use one of those clay things for roasting garlic.) Roast until very soft at 425 degrees. About 45 min, I think.

Peel one apple Cherry and remove seeds. Steam until very soft.

In a food processor, squeeze out garlic from skins, add cooked apple, salt, pepper, and a drop of lemon juice and 1 tsp of mayo. Puree until smooth. Adjust spices according to your taste. Chill.

pinktichel,I think I would put a tiny bit of water in a pot cover w/a top and watch it.
I think if u were to put it in a rice strainer(the apple)cover w a top it might work but take longer to steam/cook.

AH, you are right just cook it in very little water. Or microwave it. It really helps with the texture and takes away sharpness. (of course I did want to use Cherry as well)

I had a gala so that's what I used but I would imagine any type would be fine.

Is there any way of making this without the apple?
I don't like using fruit in my salads...

We have also made it steaming a small peeled zucchini. We liked the apple better because of the texture. If you dont like using fruit, try the zucchini.
