I see lots of threads with similar recipes. But I am looking for a recipe with eggplant in a tomatoe sauce, kind of like one made by Sonny and Joe. Its eggplant in a sweetish, thinnish tomatoe sauce. Does anyone have a recipe that sounds similar?

You can though I think I that I saw it. Is it in a thin sauce or is it thickish? Thanks...I really appreciate your help!

Thank you, it sounds delicious though not exactly what I am looking for. Does anyone else have something, maybe eggplant simmered in a tomatoe sauce sort of thing?

I have one although I'm not home now. I will try to remember to post it later. It's eggplant in tomato sauce.

I made up my own recipe once and it came out pretty good:

peel and cut up eggplant
fry it
add pasta sauce
fresh squeezed lemon (I'm sure lemon juice is great too)
and sugar
can add some water to make it more liquidy ( I know it's not a word - sorry)

I just found this while browsing some recipes. I never tried it, but here ya go!

Eggplant with Tomato Sauce

Ingredients:
2 eggplants
2-3 eggs for dipping
flour
2 cans of tomato sauce (Hunts)
1 can tomato paste
1 can water
3-4 garlic cloves
3 Tbsp sugar
black pepper

Peel eggplant and cut into thin rounds. Dip in egg and flour and brown till slightly crispy in olive oil. Peel garlic and cut into rounds. Add tomato sauce, paste and water. Shake in pepper and add sugar. Let sauce boil then add eggplant. Cook for 15 minutes.

Ok so I don't know if this is anything like what you're looking for-its not ratatoulle:

Eggplant with Tomato Sauce

1 Eggplant
1 egg
coffee rich
4 cloves garlic
1 lg onion
1 lg can tomato sauce
sugar, salt, pepper to taste (don't have exact amounts)

peel and slice eggplant. Dip into egg mixed with coffee rich and fry in oil. Set egg plant aside and saute onions (don't let them brown too much). Add remaining ingredients and bring to a boil and add eggplant back into pan.. Simmer for 45 min.

Dont know if this is what youre looking for but its supereasy and everyone seems to love it... sorry but nothings exact... Wink
peel and dice an eggplant, bake it on 400 for 45min (check on it last 10 min cuz deoending on how small the pieces are they might burn...) then I put in sweet red peppers froma jar (or you can take a red pepper and bake it on 500 for about 5/10 min) 2 cloves of garlic diced (more or less depending on your taste) and a can of tomato sauce. mix everything together and enjoy!
