If you'd like to cook it whole as a roast, try this:
Slice a 1-2 large onions and put on bottom of roasting pan. Season roast well with garlic powder or fresh garlic.
Combine:
1 c. ketchup
1 c. duck sauce
1/3 c. brown sugar
(or substitute 1 c. apricot preserves plus 1/4 c. brown sugar for above 2 ingredients)
1/8 tsp. mustard
1/8 tsp. prepared horseradish.
Pour over roast. Cover and cook at 350-degrees for around 3 hours.
At that point, cool or refrigerate, then slice and return sliced meat to pan juices and cook for around another half hour until meat is soft.
This works well for any thick cut of meat.
