Get an oven timer. Don't put in the kokosh until the temp inside shows the internal oven is really at that temp. And then make the kokosh according exactly the same amount of minutes as listed in the recipe. Forget about worrying that it's raw. If you're oven is really at the right temp before you start, all will be well.

Smart, this is a very good idea. As it happens, with most recipes I have to do 25 degrees higher than the recipe says because my oven is not accurate. Thanks!
