Can anyone provide a recipe for making duck sauce? My daughter lives in a place where she can't get these things. She does have honey, ketchup, soy sauce, most spices, apricot & raspberry jam.

Thanks! Smile

I live in Israel and while I CAN get Gold's duck sauce, I prefer not to have to pay the price.

I buy the cheap apricot jam and pour it into my KitchenAid with the whisk attachment on. I then add some lemon juice, soy sauce, paprika, garlic powder and black pepper.

I whisk it really well and pour it back into the jar. That's it!

Yesha, can I ask what you use it for? When I was in the U.S. I did buy Duck Sauce a couple of times and I guess I just threw it on chicken or something, I really can't remember. Is there a special use for it?

I use it on chicken or turkey. I'll cook it most of the way and then schmear it on. It adds a nice, tasty glaze.

sounds yummy Yesha, I do mine differently, I fry onions and red pepper, add a jar of apricot jam/jelly, ketchup and a tin of pineapple chunks.

This sauce is more like a chutney but it is also really delicious.

5 cups of fruit, peeled and chopped (aplpes, pears, plums peaches)
1 cup water
1/4 cider vinegar
1/4 cup packed, light brown sugar
1/4 taespoon salt
2-3 cloves of garlic
1/2 teaspoon dry mustard
optional: crushed red pepper to taste

Combine all ingredients in a pan and bring to a boil. Turn doen the heat and simmer uncovered until the fruit is very soft, about 30 minutes. Chill completely.

Can you give approximate amounts for the soy sauce and lemon juice pleaese?

It's according to taste... if you like it more tangy/sour, add more lemon juice. If you want it saltier and darker with the soy sauce taste, add more...

Another easy recipe:

1 cup applesauce
1/2 cup apricot preserves
2 tablespoons honey
vinegar to taste
garlic to taste

Cook everything together in saucepan.

Or you can do the super-duper-shortcut method, and just mix applesauce and apricot preserves!

I just made the recipe from yesha and I have no idea how it tastes yet, but I just wanted to say that if someone decides to whisk it in a cup with an electrical whisker, hold the cup, well. I just did it and wasn't holding the cup tight enough, oh boy, I made such a mess Laughing . I might have lost half the ingredients to the floor, counter, me...

I've made this and it came out very good every time, even when I accidentally used peach jam instead of apricot Laughing . The picture is very similar and can never remember which is which. Peach is durazno and apricot is damasco.
