Egg-free Chocolate Cake (also called wacky cake)

1 1/2 C flour
1 1/8 C sugar
1/3 C + 2 tsp cocoa
1 tsp baking soda
1/8 tsp salt

Mix dry and add wet:
1 C water
1/4 C oil
1 Tablespoon white vinegar
2 tsp vanilla

Bake at 350 for 25-30 min. Less time for cupcakes. I usually double this for a big 9 x 13 size pan.

Ultra-orange Cake

1 1/2 C flour
1 C sugar
1 tsp baking soda
1/2 tsp salt

Mix dry and add in wet:

1 C orange juice
1/3 C oil
1 Tablespoon grated orange zest
1 Tablespoon vinegar
1 tsp vanilla

Bake at 350 for 25-35 minutes. this recipe makes a 8 x8 size, double for 9 x 13. I usually glaze this once cooled with a mixture of a tiny bit of orange juice and enough confectioner's sugar and even poke a few holes in it with an ice pick first so the glaze goes into the cake. My DH loves this and raves about it and it really is an easy cake.

Egg-free chocolate chip cookies

1 3/4 C flour
1/2 tsp baking soda
1/4 tsp salt
1/4 C brown sugar
1/2 C white sugar
1/3 C oil
1 T flax seed meal
1/4 C soy milk
1 tsp vanilla
1/2 - 3/4 C choc chips

Preheat to 375. Mix flour, baking soda and salt and set aside. In small bowl, whisk flax seed meal and soy milk (this mixture replaces the egg) Add sugar, stir. Add oil and vanilla and whisk well for about 1 min until mixture is emulsified. Mix wet ingredients into dry, fold in chips. Drop batter by heaping teaspoon onto parchment covered cookie sheets, leaving 1 1/2 inches in between. Bake 10 minutes exactly and remove from oven and let cool at least 5 min. Remove entire parchment paper to rack to finish cooling. This makes soft cookies. Bake a few minutes extra if you like them crunchy. Makes about 30 cookies.
