I work in the city and am out of my house from 8:30 in the morning till 6:30 in the evening. dh gets home from work on average about a half hour before me and we're usually both starving. I usually have dinner on the table by 8, 8:30 but I have to rush to the grocery and then to cook and I can't make anything that takes too long... I need some ideas that I can either make before hand, or make in the Crockpot. However, dh & I are both somewhat picky eaters, the only chicken we like are cutlets, don't like very fatty meats...
If anyone has any simple make-ahead recipes please help!

try to google it:
either crockpot chicken cutlet
crockpot chicken breasts
crockpot vegetarian
crockpot beef
etc
most recipes, even if not specifically kosher, are adaptable by either substituting soy milk for milk, or leaving out cheese. depends on the recipe. enjoy!

You can really do anything.
Meat with cut up potaoes and onions.

do you eat ground beef? if so, pm me I will email you crockpot recipes that are very good.
Grilled Chicken Salad (really good and filling):
marinate chicken cutlets in garlic and onion powder, italian dressing, mayo, and paprika
grill (I broil, I don't have a grill) and refrigerate
Dressing:
1 cup mayo
1/4 cup sugar
1/4 cup cider vinegar
1/4 cup water
2 cloves garlic
salt and pepper to taste
blend dressing ingredients
cut chicken into strips and add lettuce, cherry tomatoes, avocado
mix with dressing and top with onion garlic croutons
this is an easy recipe that Greeneyes posted a while ago and we like. dh also only likes cutlets and is lactose intolerant, so I have a few like this.
Cajun Chicken Wraps:
1. Slice an onion & over a medium flame sauté until soft.
2. Cut the chicken into bite size pieces & season with a bit of seasoned salt. Place chicken on top of the onions in the pan. Cook the chicken until no longer pink, turning pieces once.
3. Make a Cajun sauce: light or regular mayo, Cajun seasoning, cayenne pepper, & seasoned salt. I don't have an exact recipe I just estimate & then taste it. The cayenne pepper is pretty hot though so don't go too heavy on that. Mix the sauce with the chicken onion mixture.
4. Assemble the wraps! You can add lettuce & tomato, if you like.

| I make a lot of weeknight dinners in the crockpot and one suggestion I have is to put the chicken breasts in frozen, just make sure the liquid is already hot. They won't dry out as much. I make a yummy chicken and barley dish- some chicken (like 4 peices), 1/2 cup- 1 cup of barley, one can chicken broth, can water, thyme, oregano, pepper, big chopped onion. Dh loooves this.

Chicken Cutlets (serves 4)
Sauté one pound of thinly sliced mushrooms and garlic (season mushrooms with salt and pepper to taste) until the mushrooms are tender. Set aside.
Pound out a package of Empire chicken cutlets (4 cutlets, about 1-1/2 lb.)until flattened. Dredge the cutlets in flour mixed with garlic and Creole or Cajun spice mix and season with pepper. Cook the cutlets in a frying pan with olive oil until done on both sides. Add the mushrooms to the chicken along with 3 oz of fresh lemon juice. Serve after the mushrooms are reheated. Garnish with parsley.
also, Mom007 posted a really easy sesame chicken recipe.
she said 1/2 cup Mikee Sesame Teriyaki Sauce mixed with sweet and sour duck sauce, but for cutlets that is a little too strong, so I mix 1/4 cup of the Teriyaki sauce with duck sauce.
sprinkle cutlets with salt and pepper. pour sauce mix over this and bake.

1/2 cup barbeque sauce
1/2 cup of apricot jam use less if u want it less sweet
mixed together.
brown meat (in crockpot.) remove from crockpot. slice onion and red pepper at the bottom of pot. put meat back. pour sauce over it. cook in crockpot 6-8 hrs

Can I ask something? Would it help if you planned a few meals (or even a whole week's worth, if you're up to it!) in advance, and then shopped for everything at once? That way you wouldn't have to run to the grocery store every day before dinner...
Just a suggestion that I've found helps me save time.
