| Don't have exact recipe, but I know you can bread the eggplant, put ground meat mixture on top, another eggplant, cover with tomato sauce recipe and some mushroom, and bake like that... Heavenly!!!!

ratatouille: chunk eggplant, peppers, zucchini, onions and 1 can diced tomatoes, mince garlic - saute onions and garlic, add remaining ingredients (no tomato), once softening, add tomato, s+P to taste and simmer until cooked - enjoy as a dip, on pasta or potatoes or as a side to meat/fish
sicilian pasta: to your reg. tomato/pasta sauce add 1 cubed (cooked0 eggplant and a handful of sliced mushrooms (if you don't already use)
moussaka: really good greek-style pasta free lasagna'esque meal.

| I make a baked eggplant parmesean. I slice the eggplant, sometimes lengthwise, sometimes in rounds, like 1/2" thick, lay on cookie sheets, spray with pam or brush with oil, sprinkle with salt, pepper and garlic powder, bake for like 1/2 hour or so at like 375, under soft and brown. Then I layer the slices with sauce (I often make homemade with sauteed onion, garlic, can of crushed tomatoes and some tomato paste, but can use jarred) and shredded cheese, mozeralla or muenster work well, then bake again, loosely covered for 1/2 hour and then uncovered til brown on top.
