Quiche, Pareve Onion Mushroom
Serves: 8

4 medium onions
3 cans sliced mushrooms
1 stick margarine
1/2 cup non-dairy creamer
1 egg
1 tbsp. flour
Salt
Pepper
2 regular pie crusts

Pre-heat oven to 450°F.

Sauté the onions and mushrooms in the margarine until yummy and brown. Add the rest of the ingredients. Pour into pie shells, bake for 30 minutes or so.

sautee either one large can mushrooms or fresh package and one large onion diced on a low flame for about forty min

Mixture: 2 eggs, 1/2 c. mayo, onion soup mix, fresh garlic, add it to mushrooms and onion. Bake in a pie crust for about an hr - hr and half (lightly browned)

Here is what I did this Shabbos (btw, DH loved it)
I sauteed two packs (8 oz each) of mushrooms with two onions sliced in half-circles in canola oil. Mixed in 3 eggs, spices to taste, like salt, paprika and garlic powder, 2 tbsp flour, 1 tbsp Smart Balance and 1/4 cup of mayo. Poured in greased 9-inch round foil pan and lightly sprinkled with corn flake crumbs. Baked for 1 hour at 350!

Do you need so much margarine?
And what size cans of mushrooms do you use?

I just buy the small cans of mushrooms. I don't have any on me now to see exactly what size, but I would estimate 8 oz. I can check next time I got shopping.
For the margarine, you can try to use less of it. It should still be good.
