I've been seeing a recipe SOMEWHERE over the past few weeks for Lasagna Roll-ups, but now that I'm ready to make them, I've searched all my cookbooks and can't seem to find it. Does anyone know which cookbook it is in, or have a recipe to share?

Basically, I'm looking to make individual lasagna rolls that would look nice on a Milchig buffet.

Would anyone be kind enough to post the recipe (I don't have the book)? I have a box of lasagna and I have (almost) no idea what to do with it. I've made it with tuna sauce before, but roll-ups sound interesting. Help me get rid of my chametz, please!

Thanks! I found the recipe, but it's called "Cheese-Spinach Lasagna Rolls", unless I'm going crazy, I'm pretty sure I saw something called simply "Lasagna Rolls".

Have you made these? Do they freeze well? I guess I could make them and just leave out the spinach. The recipe looks quite simple, but my question is, doesn't the filling leak out?

Anyways, here's the recipe for anyone who wants, but if anyone knows where I can find "LASAGNA ROLL-UPS" I'd love to know!!!

Rolls:
1 lb. lasagna noodles
1 32-oz. package frozen spinach
15 oz. cottage cheese
2 eggs
2 egg yolks
1 cup parmesan cheese (grated)
1/2 tsp. salt
1/2 tsp. pepper

Sauce:
3 8-oz. cans tomato sauce
1/4 cup oil
1 1/2 tsp. oregano
2-3 TBSP. sugar
1 package shredded mozzarella cheese

Lasagna Rolls:
In a large pot, bring water to a rapid boil and slip each lasagnastrip into a pot separately. Cook for 10 minutes. Drain lasagna noodles and rinse with cold water.

Lay each lasagna strip onto a dry towel and cover with a damp towel.

Follow cookign directions on spinach package and drain well.

Place spinach in a large bowl. Add cottage cheese, eggs, yolks, Parmesan cheese, and seasonings. Mix well.

Cool lasagna noodles and cute ach one in half. Spread 2 tsps. of filling onto each half of lasagna. Roll up lasagna and place, seam-side down, into a 9x13 inch baking pan.

Sauce:
Preheat oven to 350 degrees.

Mix first four ingredients. Pour sauce over lasagna rolls and sprinkle the top with mozzarella cheese.

Cover baking pan and bake for 20 minutes.

I make this in advance and it freezes well. When I want it for supper, I take it out of the freezer and it defrosts. About 2 hours before dinner I pop it in the oven. Yum.

Here’s what I do: I buy the Pasta Shells and fill it with my favorite spinach recipe, and gently line them up in the pan, openings face down. Cover with shredded cheese and then marinara sauce. Freeze.

I've also made a version with sweet potatoes. I made it up myself and dh said it tasted like restuarant food Smile

the way I would make them is:
Cook one box of Lasagna noodles. cool and spread out

Mix 1 container of cottage cheese (16oz) 2 eggs, 3/4 cups shredded mozerella cheese, dash of black pepper, salt, pinch of nutmeg. Mix well.

Pour 1/2 cup tomatoe sauce on bottom of 9x13" pan.

At end of lasagna noodle, put a generous spoonful of cheese mixture. Roll up and place in baking dish, seam side down. repeat until done.

Pour marinara saucemaybe 1 1/2 cups to 2 cups. over noodle/cheese rolls, then sprinkle with about 1 cup shredded mozerella cheese.

Cover tightly and bake at 350 for about 40 minutes.

This freezes very well.
