Mine is probably the easiest one out there...
Take 2 8 ounce containers of Tofutti cream cheese, add in 3/4 C. sugar, 2 tsp. vanilla
Pour into graham cracker crust and freeze.
Put in fridge 1/2 hour before serving. Top with sliced strawberries or kiwis, or drizzle with chocolate syrup if desired.
I think SZ mother's is different as it sounds like she doesn't have to freeze hers; she's just saving one for the future.
