| For fast and easy, you can use mayo of course, and for spice you can add a little Italian salad dressing, or some lemon or vinegar, and salt, pepper, dill ......

1/4 cup oil
2 Tbsp. Dijon mustard
1/4 tsp. garlic powder
2 Tbsp. lemon juice
salt & pepper, to taste
dried dill, to taste
Mix all the dressing ingredients together, & pour over potatoes (peeled & cubed) while they are still warm. Delicious!

make a cloudy potatoe salad and when mixing in the mayo add chutney.
this is REALY good!

Equal amounts of potato, eggs, and pickles & mayo. Here’s how:
4 potatoes
4 eggs
4 pickles
4 Tablespoons mayo
Cook the potatoes (big brown Idaho ones) whole, then peel and cube. Cook the eggs, then peel and cube. Chop the pickles into tiny pieces. You can grate half a carrot for color, optional. I like to sprinkle salt and pepper for taste, and then toss slightly to mix the mayo well, not too fast because it can get mushy.
You do not need any other flavor because the pickles do the trick. Yum, and send me some, I only like it warm! _________________ ~-~-~-~-~-~-~-

hellman's classic potatoe salad, alwasy a huge hit - u can get it off their website and add anything of intrest to make it more colorful or wtvr, personaly I only add pickles but its heaven any which way.
2 lbs. potatoes (5 to 6 medium), peeled and cut into 3/4-inch chunks
1 cup Hellmann's® or Best Foods® Real Mayonnaise
2 Tbsp. vinegar
1-1/2 tsp. salt
1 tsp. sugar
1/4 tsp. ground black pepper
1 cup thinly sliced celery
1/2 cup chopped onion
2 hard-cooked eggs, chopped (optional)
Instructions:
1. In 4-quart saucepot, cover potatoes with water; bring to a boil over medium-high heat. Reduce heat and simmer 10 minutes or until potatoes are tender. Drain and cool slightly.
2. In large bowl, combine Hellmann's® or Best Foods® Real Mayonnaise, vinegar, salt, sugar and pepper. Add potatoes, celery, onion and eggs and toss gently. Serve chilled or at room temperature.
