I lost my internet today and couldn't work...so I tried a recipe I found in a Better Homes and Gardens cookbook. I can't find pas Yisroel Tortillas in my area, and I LOVE and miss Mexican food, so I tried making my own..

Guess what...they're EASY...and with raw dough, you can make enchiladas.

Once you can make Tortillas, you can make chimichangas, quesidillas, burritos, flautas, fajitas and soft tacos, wraps and even tortilla chips! (I don't have corn tortilla recipe..if so, I can make tacos and tosadas!)

2 cups of flour
2 teaspoons "shortening" (I used canola oil...slightly more... no difference)
1/4 tsp salt
1 teaspoon baking powder
3/4 cup water (I used apple juice to make mine mezonot Very Happy )

mix the dry ingredients, add oil and mix with fork until it has texture of cornmeal. Add water/juice. Stir 20 times. Let sit 15-20 minutes. Roll on a floured surface or between two pieces of wax paper (roll them thin like pie crust. Use plate to cut out circles (use a big plate for big tortillas and small for small...I made both sizes).

heat skillet (don't add oil)...cook tortillas 30 seconds on one side and 30 seconds on second side.

There! You're done

(Sorry I can't give an exact amount because the recipe said I'd get 12 big tortillas and I didn't get that amount...I got 8 medium sized tortillas...some were bigger than others)

For enchiladas...
follow the recipe, but don't cook the tortillas...fill with beans and rice or any other filling you wish (I used rice and lentils) Roll up the tortilla like a burrito...put on greased pan and bake for 20-30 minutes at 250-300. Add cheese, sour cream, salsa bake for another 10 minutes at 200. Serve with guacamole, more sour cream and cilantro!

according to the cookbook, tamales require a special kind of flour...I'm not sure if I can find it with a hecksher...

One thing I forgot to add...Don't use a nice pan for frying...I had to go over it with steel wool (frying without oil is tough on the pan)...if this becomes a regular dish, I might buy a special tortilla pan, because it's going to get kind of dark...

I just made them, pan was fine.
But the dough kept on springing back, it was hard to roll out really thin.

Yes..I guess it takes practice (like kreplach) the recipe suggested rolling between two layers of wax paper...I haven't tried that yet.

I make them in a non-stick pan and the pan stays as clean as it was when I started! They're so easy to make! Just annoying to roll out the dough so thin...

For chimichanges you take shredded spiced beef, wrap the tortilla around and fry it in oil (bli neder I'll try to remember to post the recipe)
quesidillas are actually taking a tortilla, putting cheese, tomatoes olives and whatever you want on there, baking it in an oven for a few minutes, and cutting it up like a pizza.
Flautas, I'll iy'h have to get the recipe....like chimis only with spiced and shredded chicken and rolled up like little flutes and fried in oil
soft tacos...just put taco filling inside a tortilla
tortilla chips...cut the tortilla in pieces and fry in oil

When the kids go to bed bli neder, I'll get out my cookbook and start posting (should have thought to do that before!)
