| I usually use my mom's cookbook but my parents are coming next shabbat and I want to make something new. Any ideas for a good veggie side dish (not kugel?) One should go with chulent and one with chicken. I guess the one with chulent should be light. I am a really not good cook so I need something really good, easy and PLEASE give exact measurements. Thanks a lot!

I don't know what "veggie" could be remotely warm and good shabbos day except something like kugel....but..
I used the Cauliflower Kugel recipe in Spice N Spirit, substituted broccoli (in my case, frozen bodek--it also doesn't have to be cooked, just thawed), added a little extra salt, and put it in a deep dish pie crust...I don't hve my cook book now, but I would look up the exact recipe if you wanted later...
I also take duck sauce and olive oil(enough together to cover pan when heated)...heat in pan...throw in fresh green beans, red bell pepper (beans first for a few minutes)....cover frying pan with lid so they steam a bit. after steamed, I throw on a little soy sauce and let it simmer away a bit so it's not so wet. I use medium heat. If I want to serve them hot on Friday night, I put in a baking pan, cover with lid and heat up with the otehr food that's heated for shabbos...I wrap food, but you could also leave it ont he blech. I just personally don't use a blech. _________________

NJMommy's green beans probably taste pretty good at room temperature too, so you can serve them by day. I have a recipe for green beans with sesame vinaigrette, which is also very easy. Do you want it?
There's a recipe for stir-fried zucchini on this site too, but I don't know in which thread. It goes more or less like this:
4 zucchini, cut into matchsticks
2-3 cloves of garlic, minced (I usually use a couple of sliced scallions instead)
olive oil
salt
basil (I use dry, ground basil)
sliced or slivered almonds, toasted
You stirfry the garlic/scallions for a minute in the olive oil, then add the zucchini plus salt and basil (enough basil to add a good taste - I give a hefty few shakes) and stirfry till slightly cooked (not raw anymore, but also not mushy). You can keep this warm till the seuda, or you can make it earlier in the day and put on the blech to warm up. Top with the toasted almonds before serving.

| I made a really nice asparagus dish. You blanche the veggies and then prepare a nice dressing ( I play around with my cooking so its not to exact but I could post the idea if you want) top with some nuts and its light, pretty and refreshing.

I also make something with zucchinis. It's really easy and yummy.
Saute an onion, then add 2 zuchinnis cut into little cubes. Add about 2 spoons of tomato sauce and half a cup of water, salt and a bit of pepper (and whatever other spices you like). Cook until soft and enjoy.
ETA that it goes really well with white rice.
