eat it with the soup ... so much hardier and delish ... add more veggies and spices for better flavor ... oh and you don't have to put in so much chicken if nobody eats so much ...

I take the chicken, cut into tiny shredded pieces.
then I fry onions , make an einbren, which is mix flour with water to make a paste, I add the chicken, then add soup, or water with spices, and viola,
cream of chicken soup!! I also add pieces of asparagus in here to make it really tasty and gourmet.

make a chicken pot pie - delish - full meal in one
there are real recipes out there but the basics are:

use prepared pie crust
put in sauteed veggies: mushrooms, onion, carrort, celery, chicken with a little chicken soup - add corn starch to thicken

cover with another pie crust and pinch. put holes in top.

bake for about an hour.

yum.

my mother used to make something we called "shredded chicken" and loved. Shred the chicken off the bone, put in a pan with salt, pepper, onion powder, paprika, ketchup and soy sauce, cook until heated through (should be just a little bit of juice) - so easy.

Our version of paella:

Cooked rice. Add the chicken, ketchup & curry powder. Mix & heat.

I was going to also say Pot Pie - Spice and Spirit has a fabulous recipe. Also, shredded BBQ chicken on sandwich rolls is easy and delicious.

Another idea that I do sometimes with soup chicken or even a rotisserie chicken that needs some flavor is an easy apricot sauce, heat and eat.

Sauce: (amounts depend on how much chicken ...)
2 or 3 heaping TBSP apricot jelly
1 TBSP rice vinegar (any light-colored vinegar is OK)
splash lemon juice
garlic powder
salt
pepper

Heat in a small saucepan till combined. Add water or broth to make desired consistency. Pour over chicken and heat. Yum! I usually serve it with craisin orzo.

I always make my chicken soup on thursday afternoon. The boiled chicken is fresh and delicious for our supper Thursday night. DH and kids love it fresh, it is very soft. Not so good out of the fridge though.

Sometimes my daughter dunks her into BBQ sauce but generally we just eat is straight up. If your soup is tasty the chicken is also really tasty.

with a stick blender, blend the vegies and chicken from the soup. add eggs and spices, fry tablespoonfuls of it - delicious patties.

make chicken and noodles - this is what I do with leftover soup

I don't leave in all the veggies, but carrots and celery are good for this.
take all the chicken off the bones and make sure there isnt anything funky floating around in there- skin etc

bring soup to a boil (can add water if necessary but dont want it to be too watery) and add egg noodles. cook as long as you would usually boil. mix some flour and water and stir it all together until thickened. can add turmeric for color

That sauce sounds so yum. I am looking forward to trying it.

last week I sauteed the leftover chicken soup chicken with onions, zucchini, and red peppers and served it over rice with an optional teriyaki sauce, my husband loved it!

yeah, I put just the wings and neck into the soup every week - those get eaten with the soup at the meal - and the rest of the chicken is baked.

This topic reminds me of the book we kids said my mom should write: "1001 ways to disguise boiled chicken-and fail!"

I just use bones in my soup.

My dh doesn't like re-used chicken soup chicken, but he likes this:

Chicken crepes -
Fry onions, peppers, mushrooms, zucchini etc. add chicken bits, onion soup mix, a little flour, water, salt & pepper.

put inside homemade/bought crepes or bake inside puff pastry.

Make a mushroom sauce and pour on top of the crepe.
